Strip Steaks and Smoked Pork Chop !

DSCN1789 DSCN1790 DSCN1791 Labor Day means grilling for millions of families – it’s a tradition in this country. What better way to observe this holiday than grilled strip steaks and smoked pork chops!

I headed over to Besons’ meat market on North Euclid in Bay City and found these strip steaks at a great price, next to the steaks I spotted smoked pork chops . Treat yourself to these chops if you have never had them before.

Marinate the steaks in soy sauce, worcestershire sauce, garlic powder and black pepper a few hours before grilling. The pork chop went right on the grill with no seasoning needed. The chops were about 1/2 inch thick and went on shortly after the steaks.

When using the Grill N Pal especially for steaks be aware of the shortened grilling time because of the rapid heat transfer stainless steel imparts.

Beckys granddaughter Ali joined us for this meal and gave it a big thumbs up!

Grilled Lake Trout !!

Nothing better than grilled Lake Trout especially when you get it for free ! Thanks to Becky’s  niece Tanya for the nice Lake Trout fillet we received the other day. We had it for supper that night.

I seasoned it with a  celebrity chefs seasoning that complimented the salmons mild flavor.

One trick to salmon  fillets with the skin removed is to either grill without flipping or flip after a few minutes on one side. Salmon has a tendency to flake easily when done – this could be a problem on grill grates. Nobody likes to have food stick to grates or slip between grates into burners or coals. No problem for the Grill N Pal !

Salmon fillets, salad, vegetable and glass of wine — If you’re not eating right – you’re not living right !

Caramelized BBQ CHICKEN

I don’t grill with BBQ sauce very much but every once in a while the urge strikes.
BBQ sauce is usually heavy on sugar and therefore has a tendency to burn before food is properly cooked.
When the urge struck the other day I had a couple of chicken leg quarters and skinless chicken thighs calling out to me.
I first like to season chicken before searing on the Grill N Pal for a few minutes on each side with the grill hood closed. Brush with BBQ sauce and flip to caramelize then repeat for other side.
The chicken quarters skin gets that sticky finger licking good glaze many grillers look forward to. For calorie counters removing the skin is the way to go without sacrificing great taste.
All grilling was done with grill hood closed – this reduces grilling time and helps infuse flavor. No fear of flames or flare ups with the Grill N Pal !!

Bacon, bacon bacon !! Grilled Bacon !

Bacon – the meat that makes other foods taste better !! The ultimate test for the Grill N Pal is to grill bacon without fires and flare ups. I had a taste for liver and onions the other day and nothing goes better with liver and onions than bacon.
Grilled bacon has great taste without the additional grease when fried in a pan. One added benefit is the bacon stays flat and can be grilled to any amount of crispiness.

Grill N Pal Butterfly Chicken !

Butterfly chicken is a cool way to grill a whole chicken ! I would bet most backyard grillers have not heard of this technique or may be hesitant to give it a try.
Butterfly chicken is simply removing the backbone of the chicken using poultry shears or a sharp knife. Cut through the bones on both sides of the backbone and remove, press the chicken flat.
I have seen some grilling shows use a brick covered with aluminum foil to weigh done the chicken on the grill grates.
Once you have your critter butterflied, preparation is pretty straight forward. Season on both sides or brush with a combo of soy sauce, Worcestershire sauce, garlic powder, pepper, marinade.
Set up your gas grill with burners at lowest setting and preheat Grill N Pals. My grill temperature was about 300 degrees with the hood closed. Check your grill temperature set up this way to know how hot your grill gets. High heat is not needed. For charcoal grills have enough coals evenly spread with grey ash for at least one hour of grilling time.
BBQ sauce should be applied later in grilling process to avoid burning.
I grilled bone side down for 45 minutes with grill hood closed before flipping to skin side down for another 45 minutes again with hood closed. As always check for proper internal temperature.
With side dishes my 5 1/2 lb. bird was big enough to serve 4.

Grilled Shish Kabobs !!

Soak wooden skewers for 1/2 hour before loading with desired combo of veggies, shrimp, steak etc.
Brushed loaded skewers with mixture of Worcestershire, soy sauce, garlic powder, pepper before grilling. Preheat Grill N Pals before grilling. Baste during grilling and after turning skewers.
These are so easy and tasty make sure you make enough of them !

I hated food dropping through the grates of my grill!
