I sliced and seasoned a pile of roast pork, bell peppers, and onions. ( use meat of choice) I placed two Grill N Pals side by side on my grill to covered a 17″ x 24″ area – I call this party size. . After preheating at med. high temp. on went the Fajita mix. It only took a few minutes to thoroughly grill this mixture.
Here is a little trick about Tortillas most people may not know. Tortillas are best when reheated BUT NOT in the microwave ! Reheating in the microwave leaves them undercooked and for me a little doughy. After I moved the Fajita mixture to one Grill N Pal a couple of tortillas where place on the other Grill N Pal over med. heat. Watch them closely – as soon as you see them start to form bubbles – flip and repeat on the other side for a few more seconds.
Reheating tortillas like this changes the flavor and texture – you get a wonderful flavor and will be spoiled for life ! If you have a gas stove you can use the same method on top of the burners. The slight char this imparts is delicious and must be tried.
You can set up an assortment of items to add to the Fajita mixture on the Tortillas ! How does avocado slices, shredded cheese, salsa, refried beans sound ? Use your imagination !
