Grill Your Tortillas, Amigos !!

DSCN2004 DSCN2005 DSCN2006 Seasoned pork Fajitas were on the menu tonight. Here is a tasty, easy, delicious and inexpensive recipe to try this season.

I sliced and seasoned a pile of roast pork, bell peppers, and onions. ( use meat of choice)  I placed two Grill N Pals side by side on my grill to covered a 17″ x 24″ area – I call this party size. . After preheating at med. high temp. on went the Fajita mix. It only took a few minutes to thoroughly grill this mixture.

Here is a little trick about Tortillas most people may not know. Tortillas are best when reheated BUT NOT in the microwave ! Reheating in the microwave leaves them undercooked and for me a little doughy. After I moved the Fajita mixture to one Grill N Pal a couple of tortillas where place on the other Grill N Pal over med. heat. Watch them closely – as soon as you see them start to form bubbles – flip and repeat on the other side for a few more seconds.

Reheating tortillas like this changes the flavor and texture – you get a wonderful flavor and will be spoiled for life ! If you have a gas stove you can use the same method on top of the burners. The slight char this imparts is delicious and must be tried.

You can set up an assortment of items to add  to the Fajita mixture on the Tortillas ! How does avocado slices, shredded cheese, salsa, refried beans sound ? Use your imagination !

Justo wore his Mexico sweatshirt for this Fiesta — how appropriate !!

Expand your grilling options this season !

DSCN2001 DSCN2002 DSCN2003 My Grill N Pal was designed to expand grilling options for both gas and charcoal grills without messy foil. Recently I grilled a pile of sweet onions and mushrooms to go with a very large chicken breast. I injected the breast with a super easy and tasty combination of Soy / Worcestershire sauce / garlic powder and then melted provolone / mozzarella cheese on top ! The caramelized onions and mushrooms were added to mashed potatoes and a tasty salad completed this feast. My good friend Justo is a willing taste tester whenever I invite him over for my latest grilling trial.

Another tasty treat is grilling Spinach with sliced garlic seasoned with olive oil / salt and pepper. How about grilling bacon for those burgers ? No problem. Grilling season is just about here – time to think outside the box and expand your options this year.

The Grill N Pal is heavy gauge stainless steel designed to channel grease away from food and flames, easy to clean, durable and affordable ! Check it and other recipes at http://www.grillnpal.com
