Butterfly chicken is a cool way to grill a whole chicken ! I would bet most backyard grillers have not heard of this technique or may be hesitant to give it a try.
Butterfly chicken is simply removing the backbone of the chicken using poultry shears or a sharp knife. Cut through the bones on both sides of the backbone and remove, press the chicken flat.
I have seen some grilling shows use a brick covered with aluminum foil to weigh done the chicken on the grill grates.
Once you have your critter butterflied, preparation is pretty straight forward. Season on both sides or brush with a combo of soy sauce, Worcestershire sauce, garlic powder, pepper, marinade.
Set up your gas grill with burners at lowest setting and preheat Grill N Pals. My grill temperature was about 300 degrees with the hood closed. Check your grill temperature set up this way to know how hot your grill gets. High heat is not needed. For charcoal grills have enough coals evenly spread with grey ash for at least one hour of grilling time.
BBQ sauce should be applied later in grilling process to avoid burning.
I grilled bone side down for 45 minutes with grill hood closed before flipping to skin side down for another 45 minutes again with hood closed. As always check for proper internal temperature.
With side dishes my 5 1/2 lb. bird was big enough to serve 4.

Grilled Shish Kabobs !!

Soak wooden skewers for 1/2 hour before loading with desired combo of veggies, shrimp, steak etc.
Brushed loaded skewers with mixture of Worcestershire, soy sauce, garlic powder, pepper before grilling. Preheat Grill N Pals before grilling. Baste during grilling and after turning skewers.
