Injected Pork Loin – Family Size!

Here is a quick and easy way to spice up your meals — inject flavor using a meat injector. I chose a 4 lb. pork loin and used a simple melted butter/ garlic powder and pepper seasoning for the injecting liquid.Meat injectors can be found at supermarkets, cooking stores and some sporting goods stores. They are easy to use and should come with instructions. Injectable marinates are available or make your own – caution should be used to not overpower the flavor of what you are injecting. A 4 lb. pork loin is what I would call “family size” and fits on the Grill N Pal with room to spare!

After preheating the Grill N Pal and grill for 4-5 minutes at lowest settings I placed the loin fat side down for 20 min. I rotated the loin for another 20 min. and one more rotation for a total of 60 minutes cooking time. Pork should have an internal temperature of 160 to 165 degrees. Let meat stand for 5 minutes before carving. I removed excess grease from the grease reservoir of the Grill N Pal every time I rotated the loin. That’s the beauty of grilling with the Grill N Pal, I never had to worry about fires and flare ups this excess grease would have caused and also keeps my grill clean. Many people would be hesitant to grill this size loin but I have to say this is as close to a no-brainer as you can get! Grilled Ribs on the Grill N Pal !

Ribs are almost fool-proof on the Grill N Pal. These are a full rack not the more expensive baby back type. Preparation is the same. First remove the white membrane from the bone side of the slab for the tenderest ribs. Peel this membrane off using a paper towel or cloth to grip the membrane in your fingers. Once you do this a few times you will be a pro. Create your own rub or purchase one at the store. Rub both sides of ribs. Hint – try a little liquid smoke with your rub for that charcoal taste.

I did these on my gas 3 burner grill. Preheat the Grill N Pal at the lowest setting for all 3 burners about 4 minutes. Spray Grill N Pal with non stick just before grilling. Place ribs bone side down for 20 minutes, turn ribs and baste bone side with bbq sauce. After 20 minutes turn ribs and baste meat side with bbq sauce. Repeat basting and turning one more time for each side. Check temp. of ribs as you go. Mine were on a total of 60 min.

Good food fast not fast food!

 Here is a cool way to serve great food and save some money. Whole chickens are one of the best food values. I basted this critter with my dry veggie mix and melted butter. For flavor liquid I used chicken broth in the base of the Poultry Pal. While the bird was in the oven at 375 degrees the rice was cooking in the rice cooker. Using chicken broth in the flavor base is one of my favorite was to make fantastic gravy.As the bird cooks it adds its drippings to the chicken broth. Get creative with the different rubs and liquids, add garlic, onions, peppers to the flavor base liquid.The great thing about using the Poultry Pal is you can do other things while it’s cooking. Simply rotate every 20 or 30 minutes to evenly brown. Add a veggie / salad and your feast is complete!

With Thanksgiving just around the corner its time to shop for my 12-13 lb. bird. If you are not a fan of dry white turkey you have to try it on the Poultry Pal. The breast is kept moist while the rest of the bird is cooked. The legs and thighs of birds are muscles and take longer to cook which can dry out the white meat. Last week I visited the Midland Antique and Collectible Festival and sampled this tasty treat. The owner of this company was serving samples of her product at the Taste of Michigan exhibit and mentioned she liked to mix her veggie dip with burgers. We had been discussing both our products and our love of flavorful food. Just the other day I had the chance to try her recipe. This is about as easy as it gets to add a new twist to the old faithful burgers. I mixed 1/2 a package of Very Veggie mix to 1 lb. of burger and pressed out 3 burgers and fired up the grill.

Remember to not over press the patties, you don’t want hocky pucks, press a little depression in the center of the burgers. This will reduce the patties tendency to plump when grilling. Never press the burgers with a spatula when grilling, this will dry out the burgers. Grill slices of onions along with the burgers, this is what is great about the Grill N Pal. No hassle with messy foil ! When patties are just about done place cheese slices on burgers to melt. Buttered buns grilled are a favorate, this helps the condiments from soaking the buns.
